THAT TIME WE HAD BRUNCH FOR DINNER

some days just require brunch foods at unique hours. like 6:30 pm. but to be honest, brunch is okay with me at any hour of the day, any day of the week, especially when it's as good as fairground's. a few weekends ago, my cousin alicia was in town visiting, so we reserved a day to wander around museums + drink coffee + eat all the pastries.

we ordered countless drinks + bites + while doing so, the staff was incredibly friendly + gracious, even with our three indecisive personalities - haha! they also didn't care that we snapped a million photos for about 10 minutes before trying our order :) i had been to fairgrounds before, with my friend sarah, + had to take claire + alicia here so they could try it for themselves. anyway, this was the time we had brunch for dinner + took a lot of photos. just thought i'd share. thanks ok bye!

RECIPE: PEANUT BUTTER PROTIEN BITES [GF!]

wheat. it's a delicious ingredient. buuuut i also cut it out of my life approximately one month ago. it would make me so bloated + in pain + blah blah blah you don't need to know all the details, but i've made it my mission to find good, gluten free snacks that are easy to make + taste yummy! my sister + cousin actually made these bad boiz first, about a year ago, but i started making them much more often these past few weeks! they're small little balls of oats + chocolate chips + peanut butter + more goodness. recipe below!! :)

DIRECTIONS for the bites

  1. mix all the ingredients together + adjust to taste/consistency
  2. roll into bite-sized balls + refrigerate or freeze
  3. enjoy! 

 

INGREDIENTS for the bites

  • 1 cup of natural peanut butter
  • 2 cups of steel-cut oats
  • 1/2 cup of chocolate chips [or more!!]
  • 2/3 cups of honey
  • optional: coconut shreds! i've had different versions of these guys + they're all good, no matter what you add!
  • optional, pt. 2: protein powder! add some for an extra boost

guys - seriously, no joke when i say that i could eat a whole batch of these in one day. i usually make a double batch because they go. so. freakin'. fast. they're truly that good, + such a perfect gluten free snack when you're in a pinch.

RECIPE: CINNAMON ROLL WAFFLES

cinnamon rolls take me back to my childhood. [a whole 19 years wOw!!] my grandma's specialty was cinnamon rolls at sunday supper instead of dinner rolls. summer mornings at the lakehouse were fueled by store bought cinnamon rolls - with extra frosting of course. but YOU. GUYS. i think i've discovered the holy grail. cinnamon roll waffles. after my sister received her long-awaited waffle maker for christmas + we woke up with hingry appetites, magic happened. keep scrolling for the recipe!!

DIRECTIONS for the waffles

  1. plug in the waffle maker + turn it on
  2. open the package of cinnamon rolls + separate
  3. once heated, grease the waffle maker to ensure the rolls won't stick!
  4. flatten each roll before placing it into the waffle maker - ours had a space for four waffles, so we put in four cinnamon rolls at a time
  5. cook according to the maker's instructions, remove, + let cool
  6. ICE + enjoy!!

  • store-bought cinnamon rolls
  • waffle maker
  • cooking spray/butter/something to grease with

that's it! i would legit eat this for breakfast every day if i could. [but i can't because apparently cinnamon rolls aren't healthy.....?] these little guys would be so perfect for valentines day, topped with some gorgeous berries --- PLEASE make these. for me guys, please. okay that is all! happy waffling!

RECIPE: HOT CHOCOLATE CAKE WITH PEPPERMINT BUTTERCREAM

ummm, yeah, okay. there are currently two days until christmas. sadly i haven't been able to produce as much holiday content as i would've liked [finals, the biggest timesuck] this year, but i'm here now + that's all that matters, right? :) anyway. since i've been home i've been in the kitchen a lot --- i went on break much sooner than my friends, so free time = lots of new treats, which leads me to right now, sharing this insanely delicious hot chocolate cake with you!! recipe below!

DIRECTIONS for the cake

  1. begin by preheating your oven to 350*F
  2. combine all the dry ingredients in a large mixing bowl
  3. over the stove, combine boiling water with your hot chocolate mix
  4. remove heat once the mix has been fully dissolved + beat in the butter + eggs into the hot chocolate
  5. add the wet ingredients to the dry + mix it baby! 
  6. pour into a cake pan + bake until a toothpick can be inserted + removed clean

INGREDIENTS for the cake

  • 2 3/4 cups flour
  • 1 1/2 cup sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup hot chocolate mix
  • 1 1/2 cups hot/boiling water (to dissolve the hot chocolate mix)
  • 1 cup melted butter
  • 4 eggs
  • 1 tablespoon vanilla

INGREDIENTS for the frosting

  1. beat butter in a bowl until creamy
  2. add in sugar + cocoa
  3. once the sugar/butter/cocoa mixture is combined evenly, add in the milk, + then the peppermint.
  4. mix well + frost your cake once cooled!

INGREDIENTS for the frosting

  • 6 tablespoons butter, softened
  • 2 2⁄3 cups confectioners' sugar
  • 1⁄2 cup cocoa
  • 1⁄3 cup milk
  • 1 1⁄2 teaspoons peppermint extract

you can use toothpicks, powdered sugar, + colored white chocolate to make a little winter scene on the top! when baking into the night, you get a little creative, + by creative i mean over-the-top obsessive about little details. 😉

guys, this cake is actually so good. i know a hot chocolate cake doesn't sound incredibly appealing, but it really is delicious! + i don't even eat cake. the peppermint buttercream adds such a nice holiday flavor to it, + the decorations on top are so simple + are perfect for holiday parties! [or more realistically -- if you need a last minute dessert since there are only two days left until the big day!!] merry christmas friends; have a great weekend!!

RECIPE: PUMPKIN CHOCOLATE CHIP COOKIES

FRIENDS!! nestle has mastered the cookie game. that is all. okay, kidding, there's more, but seriously! their dough is the best + i use their chocolate chip cookie recipe when i'm in the mood for a homemade chocolate fix. in the spirit of fall + all things thanksgiving, i decided to scour the internet for a pumpkin-infused chocolate chip cookie recipe -- + guess who saved the day.  n e s t l e  --  guys, they're seriously the best. not sponsored or anything, they've honestly just nailed down the cookie thing. after sharing on instagram stories that i was making them, i knew i had to share the recipe with you all when i got about 100 DMs [okay it was actually like 3 but it's fine whatever] keep scrolling for the recipe to these AH-MAZING pumpkin chocolate chip cookies! DIRECTIONS for the cookies

1. gather ingredients + preeat ven to 375 degrees

2. combine flour, baking soda, + salt in a medium bowl

3. beat both sugars + the butter in a large bowl

4. add egg, pumpkin, + vanilla to the sugar-butter mix + beat until smooth

5. fold in flour mixture + chocolate chips until evenly mixed

6. bake for 10-12 minutes or until golden brown

INGREDIENTS for the cookies

• 2 cups all-purpose flour

• 1 teaspoon baking soda

• 1 teaspoon salt

• 1/2 cup (1 stick) butter, room temperature

• 1/2 cup brown sugar

• 3/4 cup granulated sugar

• 3/4 cup Pure Pumpkin Puree

• 1 1/2 teaspoons vanilla extract

• 1 large egg

• 2 cups chocolate chips [or more #CHOC4EVER]

i'm not sure what it is about these cookies, but they're the perfect consistency -- i'm no baking expert, but my guess is the pumpkin. . .  or the fact that i couldn't find the teaspoon anywhere so i just threw in a reasonable amount of salt + baking soda + hoped for the best haha! okay but actually, these beauties are seriously the easiest to make + delicious to eat! let me know if you end up using the recipe! i know thanksgiving is tomorrow [#procrastinationnation] but they're a great option if your still looking for an easy dessert option or an alternative to pie, or a dish to bring to an after-thanksgiving friendsgiving!
